Job Description
Preferred Education:

• Bachelor's degree in one of the following areas preferred:

· Industrial Engineering

· Process Engineering

· Food Engineering

· Food Science

· Related technical field

• Equivalent industry experience may be considered.



Required Qualifications

• 10+ years of leadership experience in food manufacturing, airline catering, commissary operations, or high-volume food production.

• Proven experience managing large production teams.

• Strong expertise in food safety, quality systems, and production management.

• Experience with ERP/MRP systems and production planning.

• Demonstrated success driving operational improvements and business performance.

• Excellent leadership, communication, and problem-solving skills.



Preferred Qualifications:

• Airline catering experience.

• Lean Manufacturing certification or experience.

• Industrial Engineering, Process Engineering, Food Engineering, Food Science, or related degree.

• Knowledge of advanced food processing technologies, including sous-vide, pasteurization, and shelf-life extension methods.



Summary:

• We are seeking an experienced Director of Culinary Operations to lead a large-scale airline catering production operation at San Francisco International Airport.

• This is a hands-on operational leadership role focused on food manufacturing, production management, process control, food safety, quality systems, and continuous improvement. This is not a menu development or creative chef position.

• The successful candidate will oversee the production of thousands of meals daily while ensuring operational efficiency, regulatory compliance, and exceptional quality.

• The Director will partner closely with Quality, Supply Chain, Engineering, Maintenance, and Commercial Leadership teams to drive world-class production performance.



Responsibilities:

• Lead high-volume airline catering and food production operations.

• Oversee multi-shift production teams and daily workflow execution.

• Drive compliance with HACCP, GMP, FDA, USDA, and customer-specific standards.

• Manage production planning, scheduling, and ERP/MRP-driven execution.

• Develop and enforce standardized operating procedures.

• Improve productivity, yield, quality, and labor performance.

• Monitor and optimize KPIs, including food cost, waste, inventory, labor, and on-time delivery.

• Implement Lean Manufacturing and Continuous Improvement initiatives.

• Develop supervisors, managers, and future operational leaders.

• Partner with cross-functional teams to ensure operational excellence.
